The Vineyard: Family domain is spread on 13 ha of vineyard across 3 cities (Dambach la Ville, Scherwiller and Châtenois). In 1997, they decided to switch to organic wine growing under Ecocert control. Since 2001, Domaine Frey practice biodynamic agriculture successfully. They strive to convey to the wine, the energy and life that they provide to their grapes. Biodynamic agriculture is first and foremost taking care of the soil. Winegrower have to guarantee its balance and craft harmonic relation between the soil, the plant and the environment.
The soil: From a parcel assemblage granities sand, and on fine silt.
Wine Making: Picking off the grapes in 75 % of harvest, maceration during 8 days, slow fermentation, ageing on lees during 8 month.
The sight : Deep red.
The nose : Expressif nose on red fruits, delicate.
On the palate: very harmonious on the palate, with great finesse.
Wine all in balance with a sweetness and a length all in power.
Serving temperature: Serve between 14°C and 15°C.
Serving suggestions: Can be enjoyed with red meats, charcuterie, bushmeats, roasts, grilled meats and of course cheeses and tomato-based dishes (Osso Bucco, spaghetti bolognese…).
