Description
The Crake (La Marouette) is a small migratory bird that is present at the edge of rivers and marshes. Its name comes from Provencal (south of France language) ‘marouetto’ which means ‘puppets’.
Origin and terroir:
100% Merlot
Apellation IGPPays d’Oc
Average yield: 70 hl/ha
Produced in the heart of the Languedoc (South of France), the grapes are planted on chalky-clay soils in slopes and produce 2500 hl /year.
Vinfigation and ageing:
This wine comes from a careful pacel selection. The harvest is destemmed. Heat maceration is used before alcoholic fermentation. Wood ageing before malolactic fermentation allows the tannins to be perfectly integrated. The wine is aged with French oak staves. The whole process is carried out under controlled temperatures. No fining. Filtration: tangential.
Tasting notes:
Greedy and full are the key words of this wine. It has a deep red colour. On the nose, we find aromas of black fruits (cherry, prune) that characterized this fruity grape: Merlot. Then roasted notes, slightly caramelized vanilla and a spicy touch appear. The palate is greedy and full with roasty notes and a delicately fruity flavour. The tannins are smooth and the wine has a good lenght in the mouth.
Enjoy at 18 C with grilled meats or cooked meats, roast duck or cheese.
